Icelandic Tomatoes

Following a binge of Salade Niçoise in the south of France, here I am in Fridheimar, 1h10 east of Reykjavik, Iceland. The days are getting very short, the nights very long and the tomatoes very red! Yes, you heard it right, with 4h30′ of daylight in December I have tasted some of the best tomatoes I have ever eaten. Iceland’s energy is 100% renewable, abundant, cheap and clean. Iceland is tapping the power of our planet and greenhouses (and their tomatoes) are loving it. Our red round fruit is getting the spa treatment using 1.2 megawatt of electric power, the equivalent to the domestic use of a town of 3000 people, volcanic tuff to control moisture and fertilisation and 600 bees to pollinate all the flowers (1 bee visit up to 2000 flowers a day), eh voila, although not quiet. Because Iceland’s production is only for local consumption, the tomatoes will only be picked when needed, giving them ample time to lounge on the vine, getting sweeter and juicer. Bring on the Olive oil 🙂
